Tip 1

When making cupcakes, always use room temperature ingredients, such as eggs, butter and milk. Cold ingredients can cause your cupcakes to bake unevenly or have a lumpy texture.

Tip 2

To get a smooth and even top for your cupcakes, fill your cupcake liners two-thirds of the way. This will help the cupcakes bake evenly and prevent them from overflowing.

Tip 3

Before adding the frosting, let the cupcakes cool completely. If you put frosting on a warm cupcake, it will melt and become too thin.

Tip 4

To get a more consistent swirl of frosting on each cupcake, use a pastry bag and a medium-sized round tip. This will give you a more professional-looking cupcake.

Tip 5

To add a special touch to your cupcakes, add decorations such as sprinkles or edible glitter. You can even use fresh fruit or chocolate chips to top them!

Ingredients:

  • 1 & 1/2 cups of cake flour
  • 1 cup sugar
  • 1 & 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup of butter softened (1 stick)
  • 1 large egg
  • 2 large egg yolks
  • 1 & 1/2 tsp vanilla
  • 1/2 cup milk

Cupcakes

Preheat oven to 350°F. In one bowl, sift cake flour with baking powder and salt. In another bowl, cream the butter and sugar with an electric mixer. Beat in the eggs and vanilla until creamy. Add the cake flour mixture as well as the milk to the egg mixture. Mix until well blended. Fill cupcake liners 2/3. Bake 20 – 25 minutes. Add time as needed. Makes around 15.

Tip 1

Start with a chilled bowl and beaters – this helps create a thicker and fluffier icing.

Add powdered sugar slowly, and use a sifter to avoid lumps.

Tip 3

To add color, use gel food coloring instead of liquid – it will not thin out your icing.

  • 1 box confectioners sugar
  • 1/2 cup of butter softened
  • 3-4 tbsp milk
  • 1 tsp vanilla

Icing

Combine all in a bowl, and beat with your mixer for 2 minutes until creamy.
